The project IE-GPwine aims to investigate and characterize, for the first time, a ion-exchange resins (IE) and biosorbent from grape pomace (GP) as novel fining agents in sustainable winemaking. The main elements of innovation consist in the investigation and characterization of innovative eco-friendly fining agents; of the overall impacts and risks related to toxic compounds; obtaining a value-added product from wine waste; and environmental friendly winemaking solutions that reduce human health risks.
